I mixed these rolls before leaving for water therapy, shaped them into buns and left to rise on a cookie sheet...Baked for our dinner while I sauteed onions and peppers, layered Pastrami and swiss over top, sliced the slightly cooled buns and piled on the other stuff...Served alongside a fruit salad and avacodo....In such a hurry to eat that I forgot to take a photo...:( Maybe next time... (Idella’s directions....Recipe from Cooks Magazine)
2 1/2 cups bread flour, (maybe less) make well
1 cup mashed potatoes, packed, either instant or real.
2 T butter, melted
1 T yeast
5 T water
1 tsp salt
1 T sugar
Dissolve yeast in water, add potatoes, butter, sugar, salt and flour. Mix and then knead. Let raise once before shaping into 9 rolls, let raise then bake at 425º for 10 to 15 minutes….Do not over bake!
