Yesterday...50º

A 10 lb. batch of pickling cukes arrived from Imnaha yesterday...Not quite what I had hoped for as some are quite large (a new business started by young people in Imnaha, so was glad to help them out) and with the cukes from our garden I got about 10 more jars and am done with the dills and we have several to eat fresh...It all works out!

Today I start on the beets, delivered a couple of days ago by our Barton Heights neighbor, and also 2 gallons of the sweet pickles are ready to slice and put in smaller jars before going on the cellar shelves...Herb is busy with the laundry and water in the garden...We now have lovely potato vines growing and blooming...I checked for potatoes and didn't find many so hope the water will help...I picked a mess of green beans for our dinner yesterday, also cherry tomatoes that we ate along with our sweet/sour venison over mashed potatoes...Hugs To All...OWAV:)

Flash Back Saturday...47º

One month ago today Cienna flew out of Portland, OR., as she started Cienna's Journey...A year in Thailand, on a Rotary Exchange, where she will live with host families, immerse herself in the culture and attend school...She, along with other exchange students, have already taken a 14 hour train ride for a 5 day excursion to Trang and the beach...She and her "new sister" Janique also visited an elephant preserve and have attended several functions with their local Rotarians, an all women group in the city of Nakhon Pathom...We are following Cienna on FaceBook and her blog where she writes weekly about her adventures...Hugs To Cienna...OWAV:)

Art/Food/Friendship...43º

Pulling the community together or the "Great Divide"...Will Roundy and Leah Svendsen Johnson opened at the Josephy Center last night...Will and Leah both were born and grew up in Wallowa County, live here now and own businesses on main street in Joseph...They were born in a rodeo/farming/logging community, now designated as an arts and culture district...How do the two mix?..Sometimes with great difficulty.

Will and Leah, talented artists, put on a great show last night...A mix of people; friends, relatives, locals, newbies, ranchers, and artist all gathered at the Josephy Center (melting pot?) to honor them and view their work...With food/spirits/art, people visited, mingled, laughed and discussed.

I guess you could call me an "inbetweener" (new word) not a local but not a newby either...I'm usually a peace maker, I dislike distention, petty grievances, pot stirrers and "I'm better than you attitudes."As well as remarks such as "Well we did it this way where I come from" or "Well we've always done it this way." Maybe, just maybe if we all worked at being a little more open minded, looked for the good in all people and forgot about "ourselves" and our "own agendas", Wallowa County and The World would be a better place to live...last night was a step, may we make more foot prints on this path to "Community."...Hugs To All...OWAV:)

Watering...40º

When the days get shorter, nights cool down it is easy to forget about watering...This fall, after a hot and dry summer it is most important to keep trees, bushes and prennials watered as we move into fall and our long winter...All plants have a better chance of survival if their root systems are healthy...While I cooked all day yesterday, Herb kept the sprinklers going, and I warmed the house.

The mini cheesecakes are done, sourdough bread didn't turn out like I wanted so I made a quick batch of small loaves (without sourdough) and will do another batch this morning to make sandwiches for tonight...Enough blathering for this day as I must get moving...Hugs To All...OWAV:)

September Days/Indian Summer...40º

Late afternoon yesterday found me sitting on the deck, where I facetimed with Pat, caught up on scrabble games and even though it was breezy I put my back to the sun and just sat there in the warmth...It had been a busy day up to that point.

My PT appointment was over, the 16 jars of plum jam were cool and setup, dinner of chicken strips, potato salad and fresh veggies consumed, kitchen floor cleaned of the sticky stuff, now it was time to rest...Herb had been chasing water all day, fetching and carrying for me, vacuumed the house and helped put dinner on the table...Coffee flavored Haagan Das finished off our day and bedtime came early.

Today's main project is making bread and a batch of tiny cheese cakes...Both will be used for finger food at Thursday nights opening at the Josephy Center...More cucumbers and tomatoes are ordered for this weekend and our gravenstein apples will soon be ripe...Beautiful fall days are to continue for a few more days...Hugs To All...OWAV:)

Older and Slower...40º

While I started the first two pans of tomatoes to roast, Herb picked the last of the plums for a batch of jam...Seemed to me that I should be able to roast tomatoes and make jam on the same day...I used to do this easily...But yesterday I found myself resting (scrabble, Facebook, reading, sitting on the deck) while the tomatoes roasted and this morning the plums and a bajillion fruit flies are still waiting for me...Today I will do the jam, have a PT appointment this afternoon and dinner (something besides leftovers) must be prepared...Looking ahead the next two days I have to make finger food for Thursday night, so as my Dad would have said, "No rest for the wicked and the righteous don't need any." Not hard to figure out where I fit!..Looking out our front window the sun is just hitting the porch, making the flag and the geraniums glow for a picture perfect day...And I'm happy to be alive even if I am slow and wicked.

Sunday night found us at Becky and Johns for a BBQ...It was a lovely evening and always fun visiting around their huge campfire while we celebrated Pams birthday...Hugs To All...OWAV:)

Fall Rerun...Roasted Tomatoes and Zucchini Casserole...40º

I Think Roasting Tomatoes and Idella's Zucchini Casserole is worth a rerun...Don't get bogged down thinking this is too much work because it is really quite easy...The tomatoes are used all winter and the next summer and the Zucchini Casserole is an easy dish for family or potlucks!..Hug To All...OWAV:)
ROASTED TOMATOES

Roasting tomatoes brings out their flavor, and they can then be used to create tasty pasta sauces, bruschetta, added to soups or casseroles.  Use fresh, ripe, flavorful tomatoes for the best results.  

10 to 15 ripe tomatoes
2-4 cloves garlic, chopped (sometimes I add bell peppers and onion)
1-2 Tbl. chopped basil or dried
Salt & pepper (Optional, I like course salt)
Olive oil (optional)

           Preheat oven to 250-300 degrees. (I do the first ½ hour at 400 deg.)  Core & halve  the tomatoes, and place skin side down on a large baking sheet.  (If tomatoes are really large I slice them into 3 slices).  Sprinkle the tomatoes with garlic, basil and salt.  Drizzle with a little olive oil and place in the oven.  Bake for 3 hours until they have shriveled yet still remain moist.  Cool and use as desired or package in ziplock bags and freeze for winter sauces.

Taking the chance that my readers won't care if I sound like a broken record, once again I will expound on roasting and freezing tomatoes instead of canning them...USDA wants you to add acid (vinegar or lemon juice) to tomatoes, increase the processing time or even pressure cook them...I want to be safe but I also prefer that my tomatoes taste like tomatoes not lemons or vinegar...A favorite when I was growing up was a bowl of tomatoes fresh from the jar with a slice of Mom's homemade bread and butter.
Step l - I'm using romas but any tomato will work they will just have more juice...Wash tomatoes, then core slice in half and place in a cookie sheet, skin side down.

Step 2- Drizzle with a good quality oil, sprinkle with fresh garlic, basil (dried will also work) and coarse salt...Three of these sheets will fit in my oven, each sheet holds about 4# of tomatoes...I set the oven on 200º and roast for 3 to 5 hours depending on the tomatoes and how dry you want them...

Ready for the oven.

If I am in the house I will switch the pans around in the oven periodically but if I'm outside working in the garden they roast fine all on their own...I do have a convection oven.

Step 3 - First thing I do is slurp a couple of these tasty morsel, using my fingers, right into my mouth, then I toast a slice of homemade sourdough bread, slide a couple more onto the bread and see if they still taste like I remembered from a year ago...AAAhhhh that concentrated sweet tomato with a burst of garlicky goodness and just a hint of sour from the bread...Are you salivating YET?

Step 4 - If there are any tomatoes left on the tray after cooling :)... I slide them into ziplock sandwich bags...The tomatoes concentrate down to less than half of what they were in the raw state...I squish the bags, pushing out all of the air possible, then to double bag these I put 4 of these bags into a gallon ziplock for their final storage in the freezer...They are flat and stack nicely, they are simple to take one or more bags at a time for soups, sauces or casseroles...Of course for a large family you can use a larger bag to start with and I do recommend double bagging them...Happy tomato roasting...Hugs to All...OWAV:)
                                                                                                                                                                                                                                                                             

ZUCCHINI CASSEROLE

Grate one large zucchini (approximately 10 inches long.) I use a very course grater...Mix in with a fork 4 to 6 eggs…place large spoonfuls of the mixture  and cook on a griddle like you would pancakes, browning on one side and flipping to the other…Barely cover the bottom of a casserole dish with roasted tomatoes, layer zucchini patties on top of the tomatoes, then a layer of mozzarella cheese... keep layering, with tomatoes, zucchini and cheese until casserole dish is full…Bake in a 325° oven for about 30 minutes…Don't overcook…I serve it warm or cold, eat it for dinner or breakfast…Just love it anytime…It works well with the frozen roasted tomatoes…

NOTE*  Since none of you will have roasted tomatoes, I think you can use a recipe for marinara sauce or a good quality marinara sauce from the store should work…Maybe add a little more garlic, basil, onion or herbs of your choice.  Eat and enjoy, Idella

Below are photo's of start to finish casserole. I grate zucchini, mix, fry and assemble casserole as i'm frying patties so a large casserole can be made and ready for the oven in about 30 minutes...In the first photo I have one large zucchini grated...Break eggs over top and start stirring with a large fork until egg coats all of the grated zucchini.




Keep stirring until all is covered

Starting on the second layer, don't overdo the tomatoes or you will end up with soup!
