Chicken noodle soup is wonderful for these dreary winter days or if you have a cold or flu…It is even better if made with homemade noodles…Many people think making noodles is time consuming and difficult…That is really not the case…As with any recipe you need to have ingredients on hand and assembled before you start mixing.
You will need broth, chicken (canned, leftover or rotisserie) veggies including celery, onion, carrots, for the soup…Flour, egg, and salt for the noodles.
A basic recipe for noodles is, 3/4 cup all purpose flour, 1 extra large egg, 1/2 tsp salt…Put flour in small bowl, add salt and egg…Mix slowly incorporating all ingredients into a stiff but soft dough, adding more flour if needed…Put dough ball into a baggy and set aside while you dice veggies and start the broth to heat…Set up a clean place on your counter to roll out the dough, use extra flour liberally for this process…Break the now “rested” dough ball in half, stretch and flatten then roll (with a rolling pin) and turn, roll and turn adding more flour until you have a sheet of thin dough…Using a pizza cutter (wheel) cut dough into narrow strips then cross cut if you want bite size noodles instead of long noodles, add more flour if needed and lift and drop small noodle pieces into a loose pile, repeat with the remaining dough.
To the boiling broth add diced veggies, return to boil, add noodle pieces slowly and stir and separate, while the broth continues to boil…Reduce heat to a simmer, cover but watch (so they don’t boil over) and simmer for about 15 minutes until noodles and veggies are cooked, add chicken pieces…Soup is done!
